Main Ingredients

  • 2 lbs bone-in chicken thighs or whole chicken pieces Use skin-on for richer flavor.
  • 2 tablespoons olive oil or coconut oil Flexible based on dietary preferences.
  • 1 large yellow onion, diced Creates a flavorful base.
  • 3 medium carrots, sliced into rounds Adds sweetness and texture.
  • 3 stalks celery, chopped Enhances the soup's aroma.
  • 4 cloves garlic, minced Adds depth of flavor.
  • 2 tablespoons ground turmeric Or 3 tablespoons fresh, grated.
  • 1 tablespoon fresh ginger, grated For a spicy kick.
  • 1 teaspoon ground cumin Adds warmth and earthiness.
  • 1/2 teaspoon black pepper Essential for turmeric absorption.
  • 8 cups low-sodium chicken broth Use low-sodium for a healthier option.
  • 2 cups water To adjust soup consistency.
  • 2 tablespoons fresh lemon juice Brightens the flavors.
  • 1 cup cooked rice, quinoa, or noodles For heartiness.
  • 2 cups fresh spinach or kale, chopped Add last for freshness.
  • 1/4 cup fresh cilantro or parsley, chopped Used for garnish.
  • 1 can (14 oz) coconut milk Optional for creaminess.

Instructions

Preparation

  • Heat the oil in a large, heavy-bottomed pot over medium heat. Toss in the diced onion, cooking for 3-4 minutes until it softens and turns translucent.
  • Add the carrots and celery, cooking for another 3 minutes until the vegetables brighten in color.

Building the Flavor Base

  • Stir in the minced garlic, turmeric, ginger, cumin, and black pepper. Cook for about 30 seconds, allowing the spices to toast and release their oils.

Adding Chicken and Liquid

  • Gently nestle the chicken pieces into your pot, skin-side down if using skin-on pieces.
  • Pour in the chicken broth and water, ensuring the liquid covers the chicken by about an inch. Toss in the bay leaf and bring the mixture to a gentle boil over medium-high heat.

Simmering

  • Once boiling, reduce the heat to low. Allow the soup to simmer gently for 45-60 minutes.
  • It’s done when the chicken shreds easily with a fork, and the broth radiates a lovely golden hue from the turmeric.

Shredding and Seasoning

  • Carefully remove the chicken pieces. Once cool, shred the meat, discarding bones and skin.
  • Return the shredded chicken to the pot, stirring in the lemon juice and adjusting salt to taste. If using coconut milk or leafy greens, add them now and simmer for an additional 2-3 minutes.

Final Touches

  • Fish out the bay leaf, taste for seasoning, and ensure the flavors are aromatic and balanced. Garnish with fresh herbs right before serving.
