  • 8 cups low-sodium chicken broth the base of your soup
  • 2 cups water to balance the broth

Vegetables and Aromatics

  • 1 large yellow onion, diced for sweetness and depth
  • 3 medium carrots, sliced into rounds add color and nutrition
  • 3 stalks celery, chopped another layer of flavor
  • 4 cloves garlic, minced for a tasty kick

Seasoning and Spices

  • 2 tablespoons ground turmeric the star anti-inflammatory ingredient (or 3 tablespoons fresh, grated)
  • 1 tablespoon fresh ginger, grated adds warmth and spice
  • 1 teaspoon ground cumin for earthy notes
  • 1/2 teaspoon black pepper essential for turmeric absorption

Finishing Touches

  • 2 tablespoons fresh lemon juice brightening the dish
  • 1 cup cooked rice, quinoa, or noodles your choice for a hearty bite
  • 2 cups fresh spinach or kale, chopped for extra nutrients
  • 1/4 cup fresh cilantro or parsley, chopped for garnish
  • 1 can coconut milk (14 oz) for creaminess

Instructions

Preparation

  • Heat the oil in a large, heavy-bottomed pot over medium heat.
  • Add the diced onion and cook for 3-4 minutes until it begins to soften and turn translucent.
  • Add the carrots and celery, cooking for another 3 minutes until vibrant.

Building the Flavor Base

  • Toss in the minced garlic, turmeric, ginger, cumin, and black pepper.
  • Cook for 30 seconds, allowing the wonderful golden aroma to fill your kitchen.

Cooking the Chicken

  • Nestle the chicken pieces skin-side down into the pot.
  • Pour in the chicken broth and water, ensuring it covers the meat by about an inch.
  • Add the bay leaf, then bring the mixture to a gentle boil over medium-high heat.

Simmering

  • Once boiling, reduce the heat to low and let the soup gently simmer for 45-60 minutes.
  • The soup is ready when the chicken is tender enough to shred with a fork.

Shredding and Finalizing

  • Carefully remove the chicken pieces and let them cool slightly before shredding.
  • Discard the bones and skin, then return the shredded meat to the pot.
  • Stir in the lemon juice and season with salt to your taste.
  • If using coconut milk or leafy greens, add them now and simmer for an additional 2-3 minutes.

Serving

  • Remove the bay leaf and taste for seasoning one last time.
  • Garnish with fresh herbs before serving.
