Ingredients

Main ingredients

  • 1 pound fresh asparagus Choose firm, bright green asparagus with closed tips.
  • 1 tablespoon olive oil For drizzling over asparagus.
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons grated Parmesan cheese Can be substituted with nutritional yeast for a vegan option.
  • 1 tablespoon lemon juice Juice from about 1 lemon.
  • to taste red pepper flakes Optional for serving.

Instructions

Preparation

  • Preheat your oven to 425 degrees F and line a baking sheet with parchment paper.
  • Rinse and dry the asparagus on paper towels. Trim off the thick, woody ends of the stems—about an inch, or until you reach the tender part.

Seasoning

  • Lay the asparagus on the baking sheet in a single layer. Drizzle with olive oil and season with kosher salt and black pepper. Toss to ensure they are evenly coated. Sprinkle with Parmesan cheese.

Cooking

  • Place the baking sheet in the oven and roast for about 10 minutes, until fork-tender and just beginning to brown.

Serving

  • Remove the asparagus from the oven and drizzle it with a squeeze of lemon juice. Sprinkle with red pepper flakes before serving if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 2-3 days. Reheat gently in the oven or microwave to maintain crispness. Consider adding garlic powder or trying other cheeses for variations.
