Ingredients

Main Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tbsp soy sauce
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

Cooking

  • In a large skillet, heat a drizzle of olive oil over medium heat.
  • Add the chopped onion and minced garlic. Sauté until they become translucent and fragrant.
  • Stir in the cubed chicken, seasoning with salt and pepper. Cook until the chicken is browned on all sides.
  • Toss in the chopped bell pepper and pineapple chunks, cooking together for an additional 2 minutes.
  • Add the rice, chicken broth, and soy sauce to the skillet.
  • Bring the mixture to a gentle boil. Then, reduce the heat to low, cover, and let it simmer for 20-25 minutes or until the rice is cooked through and the liquid is mostly absorbed.
  • Finally, fluff the rice with a fork and serve hot.

Notes

For serving, top with chopped green onions or cilantro and pair with steamed broccoli or a garden salad. For storage, cool completely and store in an airtight container for up to 3 days in the fridge, or freeze portions for up to two months.
