Ingredients

Main Ingredients

  • 1 lb smoked sausage
  • 12 oz penne pasta Can substitute with other pasta types
  • 2 cups chicken broth For a vegetarian version, use vegetable broth
  • 1 cup heavy cream Can be reduced for a healthier option
  • 1 medium onion Sliced
  • 1 medium bell pepper Sliced
  • 3 cloves garlic Minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning Can substitute with homemade spice mix if necessary
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese For garnish; can use nutritional yeast as a dairy-free alternative
  • 2 tbsp olive oil

Instructions

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the sliced sausage, onion, and bell pepper. Sauté until they are nicely browned, about 5-7 minutes.
  • Stir in the minced garlic and allow it to cook for an additional minute until fragrant.
  • Add diced tomatoes, chicken broth, heavy cream, Cajun seasoning, paprika, salt, and pepper. Bring this mixture to a boil.
  • Once boiling, stir in the uncooked penne pasta. Lower the heat to a gentle simmer and cook until the pasta is tender, about 10-12 minutes, stirring occasionally.
  • Remove from heat and stir in the grated Parmesan cheese until it’s melted and combined.

Notes

Leftover pasta can be stored in an airtight container in the refrigerator for up to 3-4 days. When reheating, add a splash of chicken broth or cream to restore its creamy texture. This dish can also be frozen for up to 2-3 months.
