Main Ingredients

  • 1 pound ground beef Can substitute with ground turkey or a plant-based alternative
  • 4 cups diced potatoes Use Yukon gold or russet for best results
  • 1 cup chopped onion Sauté with beef for enhanced sweetness
  • 4 cups beef broth Choose gluten-free if necessary
  • 1 cup shredded cheddar cheese To be added before serving
  • 1 cup heavy cream Adds creaminess to the soup
  • to taste salt and pepper Season according to preference
  • optional chopped green onions For garnish

Instructions

Preparation

  • In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  • In your slow cooker, add the browned beef, diced potatoes, chopped onion, and pour in the beef broth.

Cooking

  • Cover and set your Crockpot to low. Let it cook for 6-8 hours or until the potatoes are fork-tender.
  • About 30 minutes before serving, stir in the heavy cream and shredded cheddar cheese until everything melts together.
  • Taste and season with salt and pepper as desired.

Serving

  • Ladle the soup into bowls and top with chopped green onions if desired.

Notes

For enhanced flavor, sauté onions with the ground beef. Blend a portion of the soup for a creamier texture. Letting the soup sit overnight will improve taste.
